The process of making mishti doi involves reducing milk to a thick, creamy consistency and then adding sugar or jaggery to sweeten it.The sweetened milk is then fermented with yogurt culture to produce the distinct taste and texture of mishti doi.Then the dessert is baked/steamed hence alternately its called Bhapa Doi in Bengali
